Code Geass for sure. Smart plot, a lot cool characters, interesting alternative world setting and a lot moral questions. Not to forget all the moments when ya gonna sit with open mouth and just stare at the screen.

One Piece is amazing too if you skip the fillers but with around 600 episodes, it takes bit time.

Now there's a lot of awesome anime, but from the top of my head i can assure
Full Metal Alchemist: Brotherhood and Code Geass are masterpieces.

There's also:
Mirai Nikki (if you dont mind gore and yandere characters)
Fate Zero (finally a type/moon based anime that's good)
Mahou Shoujo madoka magica (don't judge it until the 3rd episode)

Claymore, Blood+, Divergence Eve, Elfen Lied, Eden of the East, Tokko, Trigun, Texhnolyze, Fullmetal Alchemist, Gilgamesh, Gungrave, Neon Genesis Evangelion. there's more i have, but that should get you started. :)

Well there is certainly no anime that you "have" to watch, you should try some of the mainstream ones and see what all the fuss is about.
